Rice with chicken and egg topping

Donburi is a classic and very easy meal, which is essentially boiled
rice with alternative toppings. A great quick lunch or supper dish,
but can be served with vegetables and soup for a hearty main meal.
This particular topping is a particular favourite of Japanese children,
but we think it is great for adults too! The mix of chicken and egg in
a sweetish soy (shoyu) sauce smells and tastes wonderful.

For 4 people
For the Topping:
- At least 250 gm of boned chicken (more if you have a hearty appetite, less for a light lunch or snack). Use breast or boned thigh.
- 150 gms fresh bread crumbs
- 4 thin or baby leeks, or two onions
- 4 eggs
- 4 or more sheets of Nori (processed seaweed)
For the rice:
- Between 120 and 180 grams of rice per person, depending on
appetite

METHOD |
- Cook the rice
- Slice the leeks or onions diagonally into 2cm pieces
3. Cut the chicken into bite-size pieces
- Mix the dashi, mirin, shoyu, sake and sugar in a large
saucepan
- Bring to the boil, add the chicken and onions and simmer
for 4 minutes or until the chicken is cooked
- Carefully add the beaten egg and stir in
- Put the rice into 4 separate bowls when the eggs are just
cooked with a slotted spoon scoop out the chicken with the onion and egg and place together on top of the rice with a
couple of tablespoons of broth
- Garnish with strips of Nori
