Deep fried tofu

Another classic recipe, easy to make and delicious. It is eaten in all
seasons and is usually served as an accompanying dish.

INGREDIENTS |

For 4 people
- 700 gms (2 packets) tofu
- 3 Tablespoons potato starch
For the sauce:
- 220 ml (1 cup) dashi stock
- 45 ml (3 tablespoons) mirin
- 45 ml (3 tablespoons) shoyu
- A pinch of caster sugar
For the garnish:
- A 5cm piece of daikon
- A 5cm piece of fresh ginger
- 1 spring onion

METHOD |
- Drain and dry the tofu cake all over very thoroughly with
kitchen paper, pressing gently to remove any excess liquid and
cut into pieces about 5 cm x 3 cm x 2 cms (or just 4 pieces!)
- Carefully cover the tofu pieces with the potato starch
- Grate the daikon and ginger and finely chop the spring onion
- Mix the dashi, mirin, shoyu and caster sugar in a small pan
over medium heat and stir until the sugar is fully dissolved.
Remove from heat and set aside as soon as the sauce starts to
simmer.
- Heat the oil in a wok or deep fryer and, when hot, with a
slotted spoon slowly lower in the tofu
- When the tofu have turned golden, remove and place on
kitchen paper over a drainer to allow any excess fat to be
absorbed
- Serve in separate bowls with the sauce poured over and
garnish with the grated daikon, grated ginger and finely
chopped spring onion to taste
