Horenso no ohitashi

Spinach with bonito flakes

(Horenso no ohitashi)

DESCRIPTION

A simple to prepare vegetable dish that is enhanced by the addition of bonito flakes (dried tuna flakes).

INGREDIENTS
  • 350gms spinach, asparagus, mustard greens or similar
  • tablespoons shoyu
  • 2 tablespoons dashi stock
  • generous quantity of bonito flakes (add to your own taste)
METHOD
  1. Make up the instant dashi stock (one 10gram sachet makes about 8 cups of soup strength dashi) and add the shoyu to it
  2. Boil washed mustard greens in slightly salted water for about one minute (longer if using other types of greens to your preference)
  3. Rinse and drain thoroughly, carefully squeezing out any excess liquid, then cut into 3cm pieces
  4. Mix with dashi and shoyu
  5. Arrange in a bowl
  6. Sprinkle the bonito flakes on top immediately prior to serving
