Spinach with bonito flakes
(Horenso no ohitashi) |

A simple to prepare vegetable dish that is enhanced by the addition of bonito flakes (dried tuna flakes).
|
INGREDIENTS |

350gms spinach, asparagus, mustard greens or similar
-
tablespoons shoyu
-
2 tablespoons dashi stock
-
generous quantity of bonito flakes (add to your own taste)

METHOD |
- Make up the instant dashi stock (one 10gram sachet makes about 8 cups of soup strength dashi) and add the shoyu to it
- Boil washed mustard greens in slightly salted water for about one minute (longer if using other types of greens to your preference)
- Rinse and drain thoroughly, carefully squeezing out any excess liquid, then cut into 3cm pieces
- Mix with dashi and shoyu
- Arrange in a bowl
- Sprinkle the bonito flakes on top immediately prior to serving
