Wakame and Cucumber salad

Wakame is a type of seaweed with no calories but a lot of calcium and other minerals. The combination of textures and flavours go well in this dish. You can also vary it by adding some tinned tuna or salmon; and by garnishing it with shredded or grated fresh ginger. Some Japanese cooks also add a pinch of sugar to the shoyu and vinegar mix to give a hint of sweetness.

INGREDIENTS |

One or two sachets of dried wakame seaweed

2 small cucumbers sliced either in very thin rounds or into matchsticks

15 ml (1 teaspoon) shoyu

60 ml (4 tablespoons) rice vinegar

Optionally, a pinch of sugar

Also optionally, some prawns or a tin of tuna and fresh ginger to garnish

METHOD |
- Soak the wakame in freshly boiled water for 2 minutes (or in cold water for five minutes)
- Immediately drain the wakame and gently squeeze it to remove excess liquid
- Combine the rice vinegar and shoyu (and sugar if wished – mix until it is fully dissolved)
- Add the wakame and cucumber (and tuna if used)
- Add any garnish (grated or shredded ginger) and serve
