Marinated grilled chicken

This is another dish that has become very popular around the world. It makes a great barbecue dish, but can also be cooked under the
grill. Traditionally made with chicken (‘yakitori’ literally means ‘grilled bird’!) but you could also substitute pork or beef if you like.
Grilled chicken burns easily, so don’t use the grill too high.

For 4 people

For the marinade:

45ml (3 tablespoons) shoyu
-
45ml (3 tablespoons) Sake
-
45ml (3 tablespoons) mirin
-
Pinch of sugar if wished
OR
-
1 bottle ready made sauce
-
450g boned chicken (breast or thigh)
-
4 thin leeks
-
Japanese dried chilli pepper flakes
-
Fresh ground pepper to taste

Wooden or metal skewers

METHOD |
- Cut the chicken into bite size pieces (about 2cm square)
- Cut the leek into 2 cm long rounds
- Mix all the marinade ingredients together
- Marinade the chicken and leek for about 20 minutes until most
of the marinade is absorbed
- If using wooden skewers, soak in water for ten minutes before
use (otherwise they will burn!)
- On each skewer, place alternatively chicken and leek
- Grill (or barbecue) turning frequently and basting with any
surplus marinade until thoroughly cooked
- Eat sprinkled with pepper and Japanese dried pepper flakes if
you want to spice it up a little
