Liver and leeks with sesame

Liver is an excellent source of iron and is inexpensive. This dish is
easy to make and combines the liver with leek and sesame. Serve
as a main course with rice (see separate Cooking rice recipe) a soup
and one or more side dishes.

INGREDIENTS |

For 4 people
-
At least 250 gms calf’s liver
-
3 or 4 long thin leeks
-
5 ml (1 Teaspoon) shoyu
-
30 ml (2 tablespoons) cooking sake
-
15 ml (1 tablespoon) miso paste
-
2 to 3 tablespoons roasted ground sesame seeds
-
A pinch of caster sugar

METHOD |
- Soak the liver in milk for at least 10 minutes
- Drain, rinse and dry thoroughly, then cut into 3cm long strips
- Mix shoyu, sake, miso, sugar and sesame seeds together.
- In a frying pan add a tablespoon of vegetable oil and stir-fry
the liver for 5 minutes on medium heat
- Add the leeks and stir-fry for a further 1 minute
- Add the sake mixture and continue stir-frying until heated
through
- Serve immediately in separate bowls
