Noodles are a part of the staple diet in Japan. Udon noodles are
quite thick and filling. There are hundreds of recipes, and the one
given here is very typical. You can substitute pork for the chicken,
or try some different vegetables.
This recipe is a meal in itself.

INGREDIENTS |
For 4 people
- 2 packets (1.2kg) ready cooked udon noodles (1 packet contains
three portions of 200gms each)
- 1 packet udon soup stock
- 250 gms chicken breast
- 4 dried shiitake mushrooms
- 4 abura-age (deep fried tofu pouches)
- 4 eggs
- 4 baby leeks
- 250 gms (or more) spinach leaves
- 2 spring onions
- 1 packet of bonito flakes
- Sprinkle of Japanese 7 spice
Optionally:
- 1 packet dried wakame as a garnish

METHOD |
- Remove any skin from the chicken and cut into small bite-size
pieces
- Soak the dried shiitake mushrooms in lukewarm water until
soft (this can take quite some time) then pat dry and cut into
3mm wide strips
- Hard boil the eggs, cool, shell and cut in half
- Cut the leeks into 2 cm lengths diagonally
- Wash and rinse the spinach
- Cut the spring onions into small 5mm pieces
- Soak the dried wakame in cold water for 5 minutes, then squeeze out excess water and set aside
- Add the contents of four saches of instant udon stock into a
large saucepan and add 1 litre of hot water
- Add the chicken and mushrooms, bring to
the boil then simmer for 3 minutes
- Add noodles, spinach and leeks and simmer for 3 to 4 minutes
- Serve in 4 separate large bowls, with one hard boiled
egg, and a quarter of the wakame and spring onions added on
top of each. Sprinkle the bonito flakes and 7-spice over
everything and serve
