Inari-zushi

Oinari Tofu pouches are pre-cooked and this recipe of the pouches stuffed with sushi rice is very popular in Japan, where it is frequently cooked at home and is popular in packed lunches and picnics.

INGREDIENTS

For 4 people

For plain sushi rice:

360 grams rice, cooked with 360ml water

Seasoning for rice:

30 mls (2 tablespoons) rice vinegar
15 gms (1 tablespoon) sugar
2.5ml (1/2 teaspoon) salt

OR for sushi rice with mixed vegetables:

360 grams rice, cooked with 360ml water
1/2 packet of Sushitaro ready prepared mixed vegetables for sushi rice (cooked carrot, lotus root, bamboo shoot, gourd, shiitake mushroom)

AND

1 packet of Oinari Tofu pouch ready cooked
Gari (Pickled ginger) to garnish

METHOD

Prepare the rice adding the sushitaro or vinegar seasoning whilst the rice is still hot
Remove the outer packaging and take out the two inner packets (which each contain 8 tofu pouches). Do not open the inner packets yet. Put these inner packets into a bowl of hot water
Divide the rice into 16 and shape each of these portions like a rugby ball
Discard the hot water the Tofu pouches have been warming in. Take the Tofu pouches out of the inner packets, carefully open each pouch and stuff a rice ball into it and then fold over the open end to close the pouch
To garnish, put Gari on the side of the serving dish
