Tofu and Wakame

DESCRIPTION

This is a clear soup which uses dashi stock to give the underlying flavour.

INGREDIENTS

For 4 people

  • 900 ml (4 cups) made up instant Dashi broth (5gms instant dashi)
  • 10 ml (2 teaspoons) Cooking Sake
  • 5 ml (1 teaspoon) miso
  • At least 50 gms dried Wakame
  • 400 gms tofu
METHOD
  1. Cut the tofu into small cubes about 1cm square
  2. Make up the instant dashi broth and bring to a boil in a saucepan, then immediately reduce heat to a simmer
  3. Add the shoyu and sake and simmer for one minute
  4. Add the wakame and tofu and simmer for two further minutes
