Soups
Tofu and Wakame |

This is a clear soup which uses dashi stock to give the underlying
flavour.
|
INGREDIENTS |
For 4 people
- 900 ml (4 cups) made up instant Dashi broth (5gms instant dashi)
- 10 ml (2 teaspoons) Cooking Sake
- 5 ml (1 teaspoon) miso
- At least 50 gms dried Wakame
- 400 gms tofu
|
METHOD |
- Cut the tofu into small cubes about 1cm square
- Make up the instant dashi broth and bring to a boil in a
saucepan, then immediately reduce heat to a simmer
- Add the shoyu and sake and simmer for one minute
- Add the wakame and tofu and simmer for two further minutes
