Daikon and abura-age |

Miso is one of the traditional staples in the Japanese diet. It is
made from fermented soya bean. Daikon is also known in the West
as ‘Mooli’ and is a large white radish. Abura-age is the outer skin of
fried tofu and looks like a sort of pouch.

INGREDIENTS |
For 4 people
- 900 ml (4 cups) Dashi broth (5gms instant dashi powder)
- 45 ml (3 tablespoons) Miso
- 10 ml (2 teaspoons) Cooking Sake
- About 12 cms daikon
- 4 abura-age
|
METHOD |
- Peel the daikon and cut into 1cm cubes
- Wash and drain the abura-age (to remove any surplus oil)
- Bring the water to a boil in a saucepan, add the dashi powder
then immediately reduce heat to a simmer
- Add the daikon and abura-age and simmer for 4 minutes
- Add the miso to the soup and stir until completely dissolved,
making sure that the soup does not boil
- Simmer for a further minute or so until the daikon is tender
