Tofu and Konnyaku
(konnyaku no shira-ae) |

Konnyaku is a jelly like product made from the roots of a vegetable
called ‘devil’s tongue’. It has no calories but increases the
effectiveness of your digestive processes.
|
INGREDIENTS |
For 4 people
- 400 gms tofu
- 10 ml (2/3rds tablespoon) cooking sake
- 15 ml (1 tablespoon) shoyu
- 1 packet (270gms) konnyaku
- Half a cucumber
- 1 carrot

METHOD |
- Boil the tofu in a large saucepan for 3 minutes
- Drain thoroughly and when all excess water is gone, add the
shoyu and sake and mash together in a bowl until smooth
- Boil the konnyaku in a saucepan of water for 3 minutes, then
rinse and drain thoroughly
- Cut the konnyaku block in half lengthways, then slice it into
5mm wide strips
- Stir-fry the konnyaku without oil for 3 minutes in a wok or
frying pan. Leave to cool
- Cut the cucumber and peeled carrot into very thin matchstick
size strips
- Add konnyaku, cucumber and carrot to tofu, mix well and
serve
