Tofu and Konnyaku

Tofu and Konnyaku

(konnyaku no shira-ae)

DESCRIPTION

Konnyaku is a jelly like product made from the roots of a vegetable called ‘devil’s tongue’. It has no calories but increases the effectiveness of your digestive processes.

INGREDIENTS

For 4 people

  • 400 gms tofu
  • 10 ml (2/3rds tablespoon) cooking sake
  • 15 ml (1 tablespoon) shoyu
  • 1 packet (270gms) konnyaku
  • Half a cucumber
  • 1 carrot
METHOD
  1. Boil the tofu in a large saucepan for 3 minutes
  2. Drain thoroughly and when all excess water is gone, add the shoyu and sake and mash together in a bowl until smooth
  3. Boil the konnyaku in a saucepan of water for 3 minutes, then rinse and drain thoroughly
  4. Cut the konnyaku block in half lengthways, then slice it into 5mm wide strips
  5. Stir-fry the konnyaku without oil for 3 minutes in a wok or frying pan. Leave to cool
  6. Cut the cucumber and peeled carrot into very thin matchstick size strips
  7. Add konnyaku, cucumber and carrot to tofu, mix well and serve
