Tofu and vegetables

(“Iri dofu”)

DESCRIPTION

This is basically scrambled tofu and vegetables. Although we have listed suitable vegetables, you can really use anything you like or have in the kitchen!

INGREDIENTS

For 4 people

  • 400 gms tofu
  • 200 ml (one cup) lukewarm water
  • Generous pinch of instant dashi powder
  • 15 ml (1 tablespoon) cooking sake
  • 15 ml (1 tablespoon) shoyu
  • 15 ml (1 tablespoon) vegetable oil
  • 4 shiitake mushrooms

Mixed vegetables, for example:

  • Carrot, French beans, baby leeks, cucumber, courgette
METHOD
  1. Soak the shiitake mushrooms in 200 ml lukewarm water for an hour or until soft, then drain in a fine sieve, keeping aside the water and discarding any residue, rinse, drain, dry and cut into thin strips
  2. Cut the tofu into 3 cm pieces
  3. Wash vegetables, peel where necessary and cut into thin narrow strips
  4. Add the pinch of dashi powder to the reserved liquid from the shiitake mushrooms, making sure that you have at least 100ml of liquid
  5. Heat the oil in a saucepan or wok and carefully stir-fry the tofu, mushrooms and vegetables for 3 minutes
  6. Add the dashi, shoyu and sake and continue stir-frying until nearly dry, then serve
