Rice with bamboo shoots

This dish is particularly popular in late spring and early summer when
young bamboo shoots appear. As you will probably have to buy
bamboo shoots in a tin from a Chinese store, you can eat it all year
round!

INGREDIENTS |
For 4 people
- 220 ml (1 cup) instant dashi stock (generous pinch of instant dashi
powder)
- 30 ml (2 tablespoons) shoyu
- 60 ml (4 tablespoons) cooking sake
- A pinch of caster sugar or honey
- 1 deep fried tofu pouch (abura-age)
- 220 gms or more bamboo shoot
- 3 cups (or more) Japanese short grained rice

METHOD |
- Make up the dashi stock, adding the shoyu, 2 tablespoons of
cooking sake and sugar (if using)
- Cut the tofu pouch into thin strips and boil in water for 3 minutes
to remove any excess oil; drain and pat dry
- Rinse and drain the bamboo shoots then cut into small (2cm)
pieces
- In a saucepan or wok add the dashi stock mixture and bamboo
shoots
- Bring to the boil and simmer until most of the liquid is absorbed
and the bamboo shoots are soft
- Cook the rice with the 2 remaining tablespoons of cooking sake
(and the usual amount of water)
- Combine, mix well and serve
