Daikon in broth
(Furofuki – daikon) |

Daikon is also known in the West as ‘Mooli’ and is a large white
radish.
|
INGREDIENTS |
For 4 people
- 1 medium sized daikon (about 350gms)
- 660 ml (3 cups) instant dashi stock (3 gms)
- 30 ml (2 tablespoons) mirin
- 30 ml (2 tablespoons) shoyu
- 30 ml (2 tablespoons) sesame seeds
- 1 tube Japanese mustard (‘Karashi’)

METHOD |
- Wash and peel the daikon, then cut into 3 cm wide roundels
- Make up the dashi stock
- Mix the dashi, mirin, shoyu together in a bowl
- Dry fry or roast the sesame seeds for about a minute; set aside
- Boil a saucepan of water
- Add the daikon and simmer for about 20 minutes until the
daikon pieces are tender
- Drain the water away and replace with the dashi mixture
- Bring to the boil, and simmer until the daikon roundels are
soft (another 10 to 15 minutes)
- Serve with the liquid and a sprinkling of sesame seeds and
Japanese mustard to taste if you like
