Daikon in broth

(Furofuki – daikon)

DESCRIPTION

Daikon is also known in the West as ‘Mooli’ and is a large white radish.

INGREDIENTS

For 4 people

  • 1 medium sized daikon (about 350gms)
  • 660 ml (3 cups) instant dashi stock (3 gms)
  • 30 ml (2 tablespoons) mirin
  • 30 ml (2 tablespoons) shoyu
  • 30 ml (2 tablespoons) sesame seeds
  • 1 tube Japanese mustard (‘Karashi’)
METHOD
  1. Wash and peel the daikon, then cut into 3 cm wide roundels
  2. Make up the dashi stock
  3. Mix the dashi, mirin, shoyu together in a bowl
  4. Dry fry or roast the sesame seeds for about a minute; set aside
  5. Boil a saucepan of water
  6. Add the daikon and simmer for about 20 minutes until the daikon pieces are tender
  7. Drain the water away and replace with the dashi mixture
  8. Bring to the boil, and simmer until the daikon roundels are soft (another 10 to 15 minutes)
  9. Serve with the liquid and a sprinkling of sesame seeds and Japanese mustard to taste if you like
