Stir-fried vegetables

(Yasai itame)

DESCRIPTION

This stir-fried vegetable dish is particularly nice. Although we have listed suitable vegetables, you can really use anything you like or have in the kitchen!

INGREDIENTS

For 4 people

  • 15 ml (1 tablespoon) shoyu
  • 30 ml (2 tablespoons) vegetable oil

Mixed vegetables, for example:

  • Carrot, onion, baby leeks, cucumber, courgette, beansprouts, peppers, cabbage
  • 3cm fresh ginger
METHOD
  1. Peel the fresh ginger then dice into very small pieces
  2. Wash vegetables, peel where necessary and cut into thin narrow strips
  3. Heat the oil in a saucepan or wok and stir-fry the ginger for 3 minutes
  4. Add the vegetables and continue stir-frying until cooked to your taste, then add the shoyu, stir-fry for one more minute and serve with rice or noodles
